Oatmeal, Fruit and Nut Bars

Refrigerate entire sheet for 15-30 minutes to harden before cutting into bars.

  • 2½ cups mixed chopped nuts (walnuts, almonds, cashews, pecans, hazelnuts...)
  • ½ cup seeds (sunflower, pumpkin)
  • 1½ cups mixed chopped dried fruits (raisins, cranberries, apricots, dates...)
  • 1½ cups rolled oats
  • 1½ cups Crispy Rice or Rice Krispies Cereal
  • ¼ cup toasted wheat germ
  • ¼ cup flax seed meal
  • 1 tsp cinnamon
  • ¾ cup crunchy natural peanut butter (no sugar)
  • ¾ cup honey
  • ¼ cup brown sugar
  • 1 Tbsp avocado oil
  • 1 tsp vanilla extract
  • chocolate bar 70% cacao (4-5 oz.)

  1. Preheat oven to 350 degrees.
  2. On a rimmed baking sheet toast nuts and seeds for about 10-15 minutes (mix once or twice along the way).
  3. Coat an 10-by-15-inch jelly roll pan with cooking spray.
  4. Combine nuts, seeds (or other nuts), dried fruits, oats, rice cereal, wheat germ, flax meal, and cinnamon in a large bowl.
  5. Combine peanut butter, brown sugar, honey, and avocado oil in a small saucepan over medium heat and stir constantly as it comes to a boil until bubbling, 1 to 2 minutes. Add vanilla and stir until blended.
  6. Pour the peanut butter mixture over the dry ingredients and stir until coated.
  7. Transfer the mixture to the prepared pan. Cover with parchment paper or foil and press down firmly (I like to use a measuring cup to press it down to make an even layer).
  8. Break chocolate bar into small pieces and scatter evenly over the bar layer. Put in a warm oven for 5 to 8 minutes , to soften and melt chocolate (do not turn oven on, if you toasted nuts in the oven - it's still warm).
  9. Using the offset spatula, spread the melted chocolate in a thin layer over the entire sheet. Let stand for about 1 hour to harden or refrigerate for 15-30 minutes. Cut into bars.
  10. Store in an airtight container in the refrigerator.
